View Full Version : Bandit chicken

This takes just 15 minutes to prepare. We throw it in the oven as we're heading out to the gym and it's ready by the time we get back.

2 chicken breasts
1 can diced tomatoes
2 medium sized potatoes
fresh rosemary sprigs
feta cheese
sea salt, pepper, & garlic
olive oil

Lay out 2 squares of heavy duty aluminum foil
put a couple tablespoons of olive oil in the center of each
Dice potatoes and microwave for 10 minutes
put a chicken breast on each piece of foil
season to taste with sea salt, pepper, & garlic
divide potatoes & tomatoes between the two
sprinkle with feta cheese and put a sprig of rosemary on top
close up foil and place in a 220 degree oven

It's ready in about an hour or so.

ducey family will be eating well tonight....i remember the days when i was just cooking two chicken breasts, if i did that these days my kids would mutilate each other trying to get enough to eat!!! the joys of pre-adolescence times three :shock: :shock: :shock: jmd

Did a variation of Leg's receipt:

chicken breasts
thinly sliced lemons
olive oil
a few kalamata olives
greek seasoning mix (or just oregano)
parsley
S+P
feta cheese crumbled

Toss into foil packs, 220 oven for one hour
While cooking, threw rice in the rice cooker -

While cooking, went outside and rode bikes with the kiddies. Microwaved some asparagus 3 minutes when I came back - slung it on the table - happy family.

That was a slam-dunk night!

Juli tell me more. When you say "thinly sliced lemons" are you placing the slices directly onto the chicken breasts and leaving them there while they bake? Or are you squeezing the juice from the lemon slices first, and leaving them on top of the breasts? And the olives--are they just placed in the foil on top of the chix? Sorry for the questions but I'm the kind of person that needs every detail in order to understand something! THANKS IN ADVANCE!

Yes, lemon slices, about 3 per packet, were placed on top, olives slivered and tossed on top, feta on top. It made the best juice which was drizzled over the cooked rice. I loved it. I could do a variation of this every other day (also would work with fish).

You can't go wrong. Enjoy!
