If you like creamy, deli-style slaw, this ISN'T for you. This is a low-cal dish. When making for company, I double the mayo/vinegar/mustard. Even so, it's still much lighter than traditional slaw.
1 pound bag of shredded cabbage/carrot coleslaw blend
2 apples, cored & diced (I like a sweet/crisp variety like Gala)
1/4 c golden raisins
1/4 c reduced-calorie mayo
1 Tbs cidar vinegar
1 tsp Dijon mustard
Blend everything together & refrigerate. Allow flavors to blend for at least an hour. Makes 8 servings: 65/calories each.
