Banana chocolate chip muffins
Yield: 12 muffins1cup Extra ripe medium bananas
(approximately two med)
2 Eggs
1cup Packed brown sugar
½cup Butter, melted
1teaspoonVanilla
2 ¼cup All purpose flour
2teaspoonBaking powder
½teaspoonGround cinnamon
½teaspoonSalt
1cup Chocolate chips
½cup Chopped walnuts
Puree bananas in blender. In medium bowl, beat pureed
bananas, eggs, sugar, butter and vanilla until well blended. In
large bowl, combine flour, baking powder, cinnamon and salt.
Stir in chocolate chips and nuts. Make well in center of dry
ingredients, pour in banana mixture. Mix until just blended.
Spoon into WELL greased 2 1/2 inch muffin cups. Bake in 350
oven for 25 to 30 minutes or until done. Remove from pans and
cool.

I save bananas in the freeze once they get to that basty brown black stage.. then just thaw them slightly in the microwave and then pop them in the blender or mixer when making this batch of goodies for my hate to eat breakfast girls!

LOL! I've been staring at it thinking, "I must be missing something here." I always am in the state of waiting for bananas to get soupy. It's a short window before you are on your way to penicillin.
