View Full Version : Banana Coconut Loaf

(OK, this is a basic banana bread recipe that I've jazzed up.)

2 eggs
1 c white sugar
1/2 c butter, melted
1 c mashed bananas (about 3)
1/2 t coconut extract
1.5 c flour
1 c toated coconut
1.5 t baking powder
1/2 t baking soda
1/2 t salt
1/2 c chopped walnuts*
* I sometimes skip the nuts and add 1/3 c of roasted cocoa nibs (the crunchy unsweetened shell of cocoa beans from Whole Foods). Or a 1/2 c of choc chips.

1. Mix flour, coconut, baking powder, baking soda, salt, nuts/nibs/cchips (whatever you are using).

2. Beat eggs until light & frothy. Add sugar & melted butter. Beat well. Stir in mashed banana & extract. Add flour misture & sture to combine.

3. Pour into greased 9x5x3 loaf pan. Bake in preheated 350 oven for 1 hour or until toothpick comes out clean. Let stand for 10 minutes before removing from pan.

** This weekend, I bought a box of Trader Joe's Banana Bread mix. Mixed it as instructed on the box but added: coconut, coconut extract, and chocolate nibs (this is the unsweetened crispy shell of the cocoa bean). Honestly, it was almost as good as from-scratch. No box-taste at all.
