Here is something my mom used to make for us when she was short on time (she was a single mom working sixty hours a week so she was short on time a lot!) No matter how often I eat them I never get sick of them!
6 - 8 Tostata shells (flat open faced taco shells)
1 can of refried beans (make sure you get them with no lard added to them - El Rio is a good brand)
grated extra sharp cheddar cheese
chopped tomatoes
chopped lettuce
sour cream (I use low fat but you can use regular or fat free)
any other toppings you like, i.e. guacamole, salsa, jalapenos, etc...
preheat your oven to 350 degrees. sprinkle some grated cheese onto the tostada shells and place them in a sinle layer on a cookie sheet. Heat them until the cheese melts (approximately five minutes)
Take them from the oven to cool enough to handle them.
Spread a layer of refried beans over the hardened cheese and put them back in the oven for another four or five minutes.
Once they come out for the second time top them with your vegetables and sour cream, salsa, whatever and enjoy!
I think it took longer to type out how to make them than it actually takes to make them and they are a great meat replacement because the beans and corn tostadas make a complete protein plus the cheese and sour cream have some too! If you have kids they are guaranteed to love them!
