I lived in Brazil for 12+ years and this is one of my fav recipes and easy to make! It works nicely to impress a guy (first dinner at your house type thing) and gets everyone in the mood...
Banana Fish
Filet of Fish (Cod, Tilapia, anything mild and easy to pan fry)
bananas sliced down lengthwise
Mozzarella sliced
Lightly marinate fish in fresh lime juice, sea salt, fresh ground pepper, paprika or cayanne pepper, and other spices you may enjoy. Put filets on frying pan and cook until tender but not falling apart. (Flip em over to get both sides) Before they are fully cooked or getting dry place banana slice and mozzarella cheese on top of each filet and turn off heat and cover pan. Let the chees melt and banana soften and juices come out.
Serve with rice (brown, mushroom/artichoke risotto, pilaf) and salad.

Yo Maggs this caught my eye. However, I just did a 50 miler today and ate way too many bananas so I don't think I can do this one this weekend! LOL!
Gonna try this in a coupla weeks--next weekend is the MS-150 "Escape to the Lake" so I will be riding with my DH and not cooking...HOWEVER, the following weekend is our anniversary so I may give this a shot! THANKS!

Going to have to try this although the combo of banana and moz. sounds weird I am up for the challenge. Thanks so much for sharing. I needed a new recipe to spark some interest in cooking. Just way too hot to cook over here and I hate the heat. What happened to spring? Did we just fly right past it into summer?

You can be creative with the fruit part, although bananas tend to be mild enough to blend the flavors well. I have tried it with Mango as well and LOVED IT! And any mild white melty cheese will do too. (Maybe even pepper jack if you like more spice!)
BTW if you grill, you can cook it in foil (same process adding bananas and cheese after to melt and blend) or inside plantain or banana leaves, just back in Brazil...Yummy, fun, different and exotic to impress your friends and lovers!
