Hubby and I were in Virginia Beach last week and had dinner at Rock Fish -- great seafood place. They served a grilled salmon with a diced tomato, garlic and basil relish that was absolutely delicious. So when we got home, I threw together my own: Toss together a can or two of petite cut diced tomatoes (or if you are ambitious, pick the ones growing in your yard and chop fine); several cloves of garlic (I like it spicy:)) and some fresh basil, chopped fine. Chill relish thoroughly. Grill your salmon (or fish of choice). Top with relish and enjoy. Delicious! Happy summer....

We have been eying the Copper River Salmon in the store lately I will give this a go I have been salivating since I read this.Thanks guru

My personal favorite is seasoning salmon fillets with McCormick's Season All, placing them in a baking pan with a liberal amount of real maple syrup, and baking at 350 F for 30 - 40 minutes.

I had a good one the other week:
1 part sour cream (light), 1 part dijon mustard, fresh dill, lemon juice, salt and pepper. Serve over broiled fillet .... Yummy!!

A friend gave us Copper River Salmon over the week-end-we grilled it and topped it with 2bfit's topping, it was major delicious!

I live in Chesapeake, thanks for the dinner tip. If your in the area you have to try The Surfrider, they have the best crabcakes in our area!

We were there for a long weekend (I live in New Jersey) visiting some friends. I never ate so well -- fresh fish every night we were there! If you live in the area, you should also try Tautog's, on 23rd Street between Atlantic and Pacific -- very casual atmosphere and I had the best Mahi-Mahi I've ever had there.
I love the entire Chesapeake area -- would love to retire there someday - it's beautiful.

Amen on Tautog's! Hey, were you there because of the "Sand Soccer" tournaments? My son was playing in one of them. We only live about 35 minutes from the beach. If you come down here again, you have to go a little further down and check the Outer Banks beaches out, better than VB.

We weren't there because of sand soccer, but a bunch of the kids who were playing were staying at our hotel -- we were in the Fairfield Inn and Suites. We watched some of the games -- it was brutally hot, but they were fun!
We definitely plan on going back -- and I will check out the Outer Banks beaches next time as well. Thanks!

I misread the title of this thread as "Salmon Trooper," assumed it was in the "Jokes" section, and was mighty surprised to read, "recipes."
The brain is moving slower in my old age... at this rate I'll beat my parents to the home...
