Any ideas for the 50 lbs (only a slight exaggeration) of yellow squash my boss keeps giving me each week? (he's a gentleman farmer) My neighbors see me coming with a grocery bag & they lock their doors.

I've grilled it, I've made boats filled with meat, rice, peppers & onions, I've steamed it, I've broiled it with OVOO & parm.

I think I'll bake some zucchini breads (without the zucchini, but it still sounds better than squash bread).

Honestly, some of these buggers are bigger than my arm.

Hmmm...let's see. Dropping them from a 50 story building might be kinda cool to film and put on YouTube (as long as there weren't any pedestrians walking the streets below, of course)....is that wrong?

Southern style-raised on it. Cut small crooked neck yellow squash into slices, cut up an onion (size depends on taste), put both in steamer, cook till soft. Remove squash and onions, mash up, add salt, pepper and butter. As for the big baseball bat squash they grow up here...baseball time will small fruit!

I do this with butternut squash in the winter...I think I'll give it a go, though, good idea. I may cut this suckers in half length-wise and scoop out some of the seeds before steaming -- keep the liquid down.

Well, I just finished cooking up two of these buggers -- inspired by cfoam's suggestion. Here's my twist:

I boiled 2 squashes (de-seeded) and some Vadalias in chicken broth & garlic. When all was soft, I drained the liquid & gave them a whirl in the processor. Then I added some butter.

Delish!!! So now I'm down to about 40 lbs left -- until Monday when I go back into the office and find a box of them on my desk. :o

Liz, I'd ship you some but the postage would be more than a trip to Acme...I am not kidding about the weight of these things.

Hey, know that I've got this puree thing going -- I'm not so eager to get rid of them. Talk to me next week when I'm starting to turn yellow.

Someone just told me to make lasagna with them, regular recipe but substitute the squash for the noodles.

We do that with Spaghetti Squash all the time! It's awesome! Especially with olives.

Well, I went into the office yesterday and the gentleman farmer had a load of cantaloupes, green beans and tomatoes to die for! Only 4 more squash so I guess his crop is winding down. Guess you've got to eat through 20 lbs of squash to get to the motherload.

I like the idea of sending the rest to Lizardbiker or dropping off a high building. I'm squashed out:roll:
