Get out the crock pot, honey, I'm about to make it look like you stood at the stove all day and still had time to get all dolled up in time for dinner.

Prep time: Quicker than discussing "what can I make that everyone will eat?" (15 minutes).

Cooktime: 8 hours (of course you aren't even home for this!)

Ingredients:
Bag of Egg Noodles - I like extra wide, honey
2 lbs beef chuck, with fat trimmed, cut into slices 1/2" x 3" long (it'll be ok - it's quick)
1 large onion chopped (2 cups) (You have to know the quick method)
1 lb sliced mushrooms (buy them presliced - you're worth it)
Kosher salt and some fresh pepper
2 TB cornstarch
1/2 cup lowfat sour cream
2 TB Dijon mustard
Sprinkles of dill - fresh or dry

1. Toss beef, onion, and shrooms in your 5-6 qt. cooker, add 1.5 tsp salt and a few turns of pepper, cover and turn on low setting for eight hours, or high for 6. Now go do more important things.

2. In a 2 cup glass measuring cup - blend cornstarch and 2 TB water. Ladle 1 cup of yummy cooking liquid therein and whisk - pour into small saucepan and boil until thickened - 60 seconds...Turn of the cooker, stir in the cornstarch mixture and add sour cream and mustard. Serve over noodles, sprinkle with dill. You'll love yourself. and so will your friends/family.

Serve with some nice steamed broc. or a salad. Even better the next day.

This is great! Love your humor too. :) A friend of mine swears by her crock pot. I must be behind the times (or probably just clueless) because I do not yet have a crock pot (don't laugh at me--well, OK you can but only if it's behind my back!)

I just may have to go out and get me one now, Julibird. This looks too tempting to pass up (and hey, I'm all for gettin' dolled up for DH!) ;)

Crockpot & pressure cookers -- wouldn't cook without 'em! Thanks, this looks great for those cold nights (are they ever coming? just walked the dog and it's gross out).

Yum! I'm all about the Crockpot way of cooking...soooo easy!

Now to just find a way to disguise the onions and mushrooms from my extremely picky 8 yr old. http://klrworld.com/forums/Smileys//Custom/think2.gif (http://javascript:void(0);)

Good luck with THAT one K-girl! :o All I can think of is maybe wrap them in a Bazooka bubble gum wrapper? (Do they even make that anymore? You know, with the Bazooka Joe comics inside? I AM SO OLD!)

Lori,

Yes they still make Bazooka Joe bubble gum, look in the candy aisle in your food store, a box of is usually 99¢, there's 50 pieces in it, I think. I go through a box every couple of weeks or so. I keep in the car and chomp on it during class.

You can probably pick up a decent crock pot at a garage sale, flea market or thrift store.

BTW, Jules you're a scream and your recipe looks great.

Wow, nice gourmet stuff here. I've never used a crockpot to cook anything! But as Pink says.. take my pressure cooker and I will pay a handsome ransom fee. I can't wait for COOL winter nights to make some beef and sausage clean out the refrigerator stew.

Hey NJ, do you make risotto in your pressure cooker? Could anything be easier? Load & lock -- 8 minutes, perfect risotto!

Wow, never tried that one. Send me the directions and ingredients on that one please I am getting hungry now! My mom taught me how to use the thing a million years ago. Maybe I should do some research and find some new stuff to make.. the 2 or so staples are outta date.
Friday as I was leaving the gym, my DD came home from Lasalle and requested roast beef. She wanted to eat before 7 and it was already 5:15. Bought the 3 lb roast, added a can of beer, carrots and onions and some spices and the thing was on the table by 6:40. Gotta love it. Hey NJ, do you make risotto in your pressure cooker? Hi Pink! I'd love to hear how you make your risotto in a pressure cooker. I get so tired of standing at the stove, stirring, adding liquid, stirring more, etc.

Thanks!!
