here's a great recipe. I'm always looking for something else to do with fish to liven it up a bit and I created this recipe last night. The whole family loved it, even my four year old.

This recipe is for 6 large pieces of fish, as I have a large family. If you're cooking for less, adjust accordingly.

6 filets of white, flaky fish; such as cod, orange roughy or basa.
2 cups of fresh spinach
1 can of white beans, such as great northern, drained and rinsed.
2 teaspoons of roasted garlic
1 teaspoon of vegetable "Better than Bouillon" (I love this stuff, I use it to season rice, quinoa, etc... It's high in flavor and sodium, so a liitle goes a long way)
1 tablespoon of extra virgin olive oil
2 or 3 fresh basil leaves or a teaspoon or so of dried basil
salt and pepper to taste (keep in mind that the "Better than Bouillon is very salty, you may want to taste the mixture before adding additional salt)

Wash your filets and pat them dry. Place them in a shallow pan sprayed with cooking spray.
Place all other ingredients in a food processor and pulse several times until creamy.
Use a rubber spatula to spread mixture over the fish and bake @ 350 degrees for 18 - 20 minutes. I served it with red pepper quinoa and asparagus with mushrooms and onions. It was a fine meal!

Monica, looks delicious. I've been on a fish kick the last three weeks. Salmon and Tilapia have been on our pallets, looking to try something new. :)

I eat fish and chicken all week long and then I splurge on Sunday. Last Sunday it was a hot dog....or two. :redface:
You start to run out of ideas when you eat like that by about week three. I'm a "variety is the spice of life" kind of gal, so I get bored easily unless I keep it varied. I would love for anyone who has good chicken and fish recipes to share. Hint, hint.

Here's one my whole family loves:

about a pound of salmon
garlic powder
1 pkg of frozen chopped spinach, thawed and drained
1 cup low sodium chicken or veg broth
several cloves of garlic, minced
pkg of whole wheat spaghetti
asiago cheese
2 - 3 tbs olive oil
salt and pepper to taste

Sprinkle salmon with garlic powder (and a little olive oil) and grill 'til done.
While it's cooking, get the pasta boiling. In a large skillet, saute the garlic in olive oil 'til soft. Add the broth and chopped spinach and saute all until hot. When the fish is done, cut into bite sized pieces (it'll likely just fall apart) and throw it in the large skillet with the rest, just for a few minutes to mix the flavors.

Serve over pasta, sprinkle with asiago.

I tend to use more salmon and less pasta - this is a favorite even with my kids, and it's terrific the next day.

Thanks lah62! It looks delicious and I just happen to have all of the ingredients here. No trip to the store makes it a whole lot better!

My favorite salmon recipe is very simple.

Start with either plain salmon fillets or even better, the stuffed salmon fillets from Costco.

Place in a glass baking pan.

Liberally season with McCormick's Season All.

Pour a liberal amount of real maple syrup over the fillets.

Bake at 350 F.

Hope y'all enjoy it! My labrador also loves salmon pasta night because hubby gives her the salmon skin (says if it's healthy for grizzly bears it must be good for labs, too!). :)
