here's a great recipe. I'm always looking for something else to do with fish to liven it up a bit and I created this recipe last night. The whole family loved it, even my four year old.
This recipe is for 6 large pieces of fish, as I have a large family. If you're cooking for less, adjust accordingly.
6 filets of white, flaky fish; such as cod, orange roughy or basa.
2 cups of fresh spinach
1 can of white beans, such as great northern, drained and rinsed.
2 teaspoons of roasted garlic
1 teaspoon of vegetable "Better than Bouillon" (I love this stuff, I use it to season rice, quinoa, etc... It's high in flavor and sodium, so a liitle goes a long way)
1 tablespoon of extra virgin olive oil
2 or 3 fresh basil leaves or a teaspoon or so of dried basil
salt and pepper to taste (keep in mind that the "Better than Bouillon is very salty, you may want to taste the mixture before adding additional salt)
Wash your filets and pat them dry. Place them in a shallow pan sprayed with cooking spray.
Place all other ingredients in a food processor and pulse several times until creamy.
Use a rubber spatula to spread mixture over the fish and bake @ 350 degrees for 18 - 20 minutes. I served it with red pepper quinoa and asparagus with mushrooms and onions. It was a fine meal!
