8 Ounces Tempeh, cut into 1/4- inch cubes
2 8-ounce cans tomato sauce
1/2 cups onion, finely chopped
1/2 cup red or green bell pepper, finely chopped
2 small carrot, Pared and shredded ( about 1/2 cup)
4 teaspoons soy sauce
2 clove garlic, minced or pressed
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
4 burger buns or hard rolls, split and toasted, if desired
1. Place all the igredients except the buns in a 2- Quart saucepan. Bring the mixture to a boil. reduce the heat to medium and cover the suacepan with a lid. Simmer the mixture, stirring occasionally, for 20 to 25 mins. or until the onion and pepper are tender.
2. place the bottom half of the buns on plates and spoon the mixture onto the buns equally and place to top of the bun on the sandwiches.
Serves 4
Per sandwich: cal 283, Protein: 15 gm, fat:5 gm., carbs: 43 gm.
