That's how I deceive my children into eating these protein-filled pancakes. They are healthier and I jazz them up to taste like donuts. You can too!

I took a basic pancake recipe (serves 4) and freaked it:

Turn griddle on to med-high.

mix these dry ingrediants:
1/2 cup whole wheat flour
1/2 unbleached white flour
1/2 cup old fashioned oats
1/2 cornmeal (or just another 1/2 cup oats) cornmeal gives it a nice texture
2TB baking powder
1 tsp pumpkin pie spice (the donut factor) optional - use cinnamon, whatever

mix wet ingrediants:
2 eggs (you could just use the whites - I use the whole thing)
2 TB melted butter, or trans-fat free spread, or veg. oil
1 cup lowfat cottage cheese (the protein factor)
3/4 cup or 1 cup milk (I use lowfat - you can use skim) depending on humidity and chemical reaction
1 tsp vanilla

combine wet into dry and just lightly mix with a few turns of the fork - lumpy is good! Too much mixing and the pancakes won't be nice and light.

Drop about a 1/3 cup of batter onto a prepared griddle. These babies rise up beautifully and are surprisingly light despite the amount of roughage and protein that's in them.

Put your fruit/jam/maple syrup on top - whatever makes you smile.

I put a blob of lowfat whipped cream and raspberries on top and called them "birthday cake" pancakes this morning - kids ate it all up.

I always love your recipes, Julie. Thanks for sharing them. I got a laugh out of my sister this weekend when I told her what you call your crock pot.:grin:
