It's berry season and I wanted to share a terrific recipe for you. It's perfect for Spring.
1 bag of organic spring mix
1 bunch of leaf lettuce, your choice. I usually use romaine for the crunch factor but tonight I used red leaf lettuce and it is every bit as good.
1 package of raspberries or strawberries, again, your choice
sweet onion slivers
a sprinkling of gorgonzola or blue cheese
a sprinkling of toasted walnuts
dressing:
1 part honey
1 part 100% pure maple syrup
2 parts apple cider vinegar
1 part (or less) olive oil
Put both kinds of lettuce in a salad bowl. Add the raspberries/strawberries, sweet onion slivers and gorgonzola/blue cheese. Add the dressing and finally the hot toasted walnuts. Mix and serve.
This will quickly become your favorite salad. I take it to pot luck dinners and always have at least one person ask me for the recipe. My family is completely crazy about it as well. In fact, I haven't met anyone who doesn't like it. :)

Hey! I have almost all of this stuff in my fridge! I'm gonna go get the fruit tomorrow and make this salad for tomorrow evening--THANKS MONNIE! Looks lips smackin' DEE-LISH! :)

Looks yummy, but I'll wait until the fresh local berries get here.
Monica, this looks wonderful but, sadly, it won't work for the Pinks, since Mr. P's diabetic. I'll keep it on-file for company though.

:( I'm sorry, I forgot. I really shouldn't eat sugar because it makes me gain weight at a rapid rate. I've been having to wean myself off the "holiday diet" that I was on for three weeks. Lots of fried foods, lots of sugary treats, very little vegetables, etc.... The only reason I came back with an extra five pounds instead of fifteen was because we were so active throughout the trip. I've been struggling, though. I want to eat something sugary every day; I can feel the pull, it's like gravity.:mad: Hence the sweet salad instead of a sensible lettuce and purple cabbage salad with feta cheese, olives, tomatoes and Italian dressing. :rolleyes:
HELP!!!!! SAVE ME FROM MYSELF!!!!:o

The salad/sandwich place near work in Boston does something similar with cranberries, grapes, gorgonzola and pistachios, with a balsamic vinegarette. Is it lunchtime yet??? :)

Since when did FL start producing 100% pure Maple Syrup? :p It must cost a pretty penny to buy it down there.

My hubby has connections.;) Seriously, he has a customer who is a Canadian in the Summer and a Floridian in the winter. He always tips him with pure maple syrup. I have a nice little supply. There is nothing like pure maple syrup. I absolutely love the stuff! I use it in my "Mother of all Muffins" recipe along with honey instead of refined sugar... and any time I can use honey or maple syrup instead of white sugar. I will post my "Mother of all Muffins" recipe but I warn you, it's a ton of work, but totally worth it. The recipe got its name from my best friend, who after tasting them begged me for the recipe and then refused to make them because of the amount of work involved. But the recipe makes a lot and they freeze well. They are perfect for breakfast on the fly and they are full of fiber and no refined sugars.:)

Thanks, Angie; it really is good to be back. Once you try this recipe you'll be hooked! My mother came home with it when she took a trip to San Fransisco about five years ago. I love the food in California. Everyone I know who moves to Florida from California always asks me why the restaurants suck so bad here. :redface: Even mall food court food is excellent in California. 8)
