Two pieces of toasted whole wheat bread
half of 1 Haas avocado
two Campari tomatoes (or any sweet juicy variety)
several small onion slivers
half of 1 pickling cucumber sliced thin
alfalfa sprouts
sea salt
mayonaise

Spread a thin layer of mayonaise on each slice of toasted bread.
On one slice of bread, layer the cucumber followed by the
avocado followed by the
tomato followed by the
onion
sprinkle with sea salt and top with
alfalfa sprouts.
strategically place the other peice of toast on top and hold on tight.
This sandwich is tough to keep together but well worth the effort!
This sandwich has everyone in my family's seal of approval, right down to the 4 year old.

Monica my mouth is watering. However, 'round here it's only tomato season in the summer. Any tomatoes you buy at the supermarket now are horrid. Actually, all tomatoes in the supermarkets here are horrid once you've tasted the home grown ones from your back yard. OOOoooooh summer is a comin'! This sandwich reminds me of summer! Thank you! :-)

You're such a guy. This would be my oldest son's idea of a great sandwich. Unfortuanately for him I make him eat the good stuff. He'll be out on his own soon enough, eating ramen noodles and bread and ketchup.
