1 can of Navy or Cannonlini beans, rinsed and drained
1/2 clove of garlic, minced
tablespoon fresh lemon juice
good quaility olive oil
sea salt to taste

Toss the beans, garlic, lemon juice in a food processor and puree until lumps are gone. Add enough olive oil to make it smooth. Salt to taste.

Great for dippng carrots, celery, cucumbers. A better alternative to bean dip than the canned variety with the hydrogenated oils, though my husband likes it with Fritos.

This meal is/was a southern staple in our family. Thanks for the comfort food reminder. :)
